Legends are often formed from several sources and stories. That of Dom Pérignon champagne is a brilliant example. The House of Moët & Chandon, owner since 1823 of the Abbey of Hautvillers, near the town of Epernay, launched in 1936 its special cuvée, Dom Pérignon, whose international success did not contradict the legend that preceded this creation and the choice of its name.

The origin of the name Dom Pérignon comes from a monk, born around 1639 and deceased in 1715, cellar master of the Abbey, whose knowledge and dexterity in blending, racking, fining and stabilizing wines made the fortune and fame of the Abbey's wines. The monks who followed him continued in his footsteps, praising his merits as an oenologist and manager. However, it seems that his genius only concerned the production of still wine. Louis XIV is even said to have been infatuated with it until his doctor forbade him to drink it. However, sparkling wines had already been known in England since the end of the 17th century (when the manufacture of stronger, hermetically sealed bottles allowed a second fermentation thanks to the addition of sugar). For his part, the monk Dom Pérignon de Hautvilliers apparently worked hard for the spectacular progress of still wine only, not being convinced by the virtues of a second fermentation in the bottle. Indeed, at the end of the 17th century, bubble wines were rather considered as "a depravation of taste"...

. Since then, proud and protective of this heritage, Moët & Chandon has maintained the myth of this know-how by associating exceptional vintages with the Dom Pérignon brand.

The latter is now emblematic of French luxury and the favourite drink of James Bond. Claude Moët's grandson, Jean-Rémy, has succeeded in this feat. On his death, Pierre-Gabriel Chandon des Briailles, his son-in-law, bought the ruins of the Abbey of Hautvillers and continued his father-in-law's work to make it into Le Champagne!

Today, the new cellar master is the famous Richard Geoffroy, who declares: "Each vintage is a unique piece", adding: "Champagne is a sublimation of wine and it needed a legend worthy of this fame". One of the latest communication campaigns is by Karl Lagerfeld with Eva Herzigova as the star model.

That being said, Champagne Dom Pérignon is now an affordable sparkling wine. Indeed, beyond the luxurious image of its wines, the Champagne region has already anticipated its turn towards globalization and, among its main players, Dom Pérignon is looking to the future with a sparkling outlook !
