"Bernard Baudry seeks the silky and civilized dimension in his chinons, while remaining as close as possible to their expression of terroir. This approach, which he now pursues with his son Matthieu, is coupled with organic certification." The best Wines of France 2019 (La Revue du Vin de France)
Situated in Touraine, straddling the communes of Cravant-les-Coteaux and Chinon, the Bernard Baudry Domain is one of the flagship vineyards of the Chinon appellation in the world.
The first two hectares purchased by Bernard Baudry in 1975 marked the beginning of a great adventure. Born into a family of winegrowers in the region, he undertook a solid training as an oenologist in Beaune, then worked as a wine consultant at the Tours laboratory. Enthusiastic and persevering, Bernard Baudry soon found himself at the head of 32 hectares. Since 2000, his son Mathieu joined him, after studying in Mâcon and Bordeaux and training in California and Tasmania. Both work in collaboration with a reference in Chinon, Philippe Alliet.
The diversity of soils is impressive, ranging from gravel on the plains to clayey limestone on the slopes and sandy limestone on the plateaux. This specificity of each terroir allows a plot-by-plot vinification. The aromas, flavours and bouquets of each plot are enhanced through the different cuvées, each one being the mirror of its terroir thanks to a single grape variety cultivation (Cabernet Franc in 100% of the red wines and Chenin Blanc in 100% of the whites). Since 2006, organic certification has been granted to Domaine Bernard Baudry, already committed to respecting the environment (compost made from manure, use of copper, sulphur, horsetail and nettle). Harvesting is manual and the bunches are destemmed before being sent by gravity into differentiated vats made of raw cement, stainless steel and wood. Fermentation is carried out naturally, without chemical correctors, then the wine is aged in cement vats with a minimum of racking. The maturing process is long to allow the silkiness of the wine to develop. The climate has an enormous importance in the results obtained, each vintage being a reflection of the previous year. As Bernard Baudry so aptly puts it: "the boss is the climate. We have to know how to accept the good surprises and the bad ones it brings to our vines and our harvests. "
Among the six vintages, two are remarkable:
. Clos Guillot, whose vines have been reintroduced, is often called "the forgotten terroir". These are ungrafted vines, or "franches de pied", planted in yellow limestone, whose mineral traces are perceptible on tasting. It is energetic and has a beautiful vitality.
La Croix Boissée, which is particularly prized among the reds of the Chinon appellation, comes from a white clay-limestone soil. Capable of long ageing (6 to 7 years), its power and velvety smoothness are sumptuous.
The wines perfectly reflect the elegance and lightness of the Cabernet Franc, of which the reds are 100% composed. In their early youth, they possess aromas of raspberry and blackcurrant, then as they age, those of cooked fruits and spices. Extremely renowned throughout the world, particularly in the United States, the wines of the Bernard Baudry estate have been the subject of many laudatory reviews (Revue du Vin de France, Guide Bettane & Desseauve).
