Restaurant owner in Dijon, Dominique Gallois decided to take over the family estate in 1989, while his father, Jean, was dedicating his production to the wine trade. The estate, now 4 hectares in size - half of which is in the Gevrey village appellation - dates back to 1901, when Dominique's great-grandfather built his cellar and house in Gevrey-Chambertin. Since 1989, Dominique Gallois has modernised the facilities, expanded the vineyard into iconic vines and imposed rules for winemaking and respect for the environment to allow the terroir its most authentic and delicate expression.

Located in the Côte de Nuits, in the heart of Burgundy's most renowned climats, the Dominique Gallois vineyard alone brings together seven Gevrey-Chambertin appellations, including three premier crus: 'Combe aux Moines', 'Petits Cazetiers' and 'Les Goulots', as well as one Grand Cru: 'le Charmes-Chambertin'. Almost all of them are reds, exclusively composed of Pinot Noir.

With his non-interventionist policy, Dominique Gallois allows the vines to flourish while respecting their environment. No pesticides are used and ploughing is done with a plough. The elegance of the Burgundian terroir is highlighted and the yeasts are all indigenous. Pigeage and remontage are done by hand and the wine is aged in Allier oak barrels for 18 months. Gevrey-Chambertin combines finesse, complexity and freshness, the hallmark of great Burgundies. Dominique Gallois manages to sublimate the mystery and fragility of this terroir thanks to his know-how. The colour is light ruby, the nose has notes of truffle, undergrowth, smoke, violet and morello cherry. The tannins are firmly established. On the palate, the dark fruit wins out, with a touch of chocolate, mint, savory and tobacco.

Paired with a fine piece of beef or veal, and even more so with game, Dominique Gallois's Gevrey-Chambertin makes an impression.
