Ideally located on the Côte, between Aubonne and Bougy-Villars, the vines of the Domaine La Colombe, in the commune of Féchy, start from the heights and finish gently on the shores of Lake Geneva.
Three generations of winegrowers have succeeded one another: Jules Paccot first of all, the son of a Savoyard seasonal worker, bought a few parcels of land on the Côte and settled there. His son, Roger, built the estate, which he named after the Paccot family's coat of arms "La Colombe", granted in 1356 by Count Amédée VI of Savoy as a sign of peace. He consolidated the reputation of wine in the region. His son, Raymond Paccot, follows in his footsteps in the company of his wife Violaine after training as an oenologist-winemaker. The family's story doesn't end there, since Laura, their daughter, now works there as well, adding all her dynamism and innovative ideas.
At Domaine La Colombe, each parchet is respected according to its needs. Biodynamics was introduced almost twenty years ago! At that time, no one envisaged working with so much patience and exigency. Natural rhythms are respected and no compromise is made with quality. The terroir is composed of clayey limestone soils and the sunshine is maximum. The grapes are harvested by hand, the vinification is done in stainless steel vats and the wine is aged on lees.
Produced from the vines of Mont-sur-Rolle, the Raymond Paccot's Petit Clos is only composed of the single grape variety Chasselas. Part of the La Côte appellation, these vines are situated at an altitude of over 500 metres and benefit from the south-facing slope. They are also protected from the wind. The terroir of the Petit Clos is composed of clay, its stumps are old and impose respect. The work in the vineyard is organic, the harvest is manual. The wine is aged on lees, classically in stainless steel tanks.
On the nose, the Petit Clos is subtle and elegant, with notes of ripe pear and white flowers. Structured, the fatness of the wine is balanced by the fruity side, sometimes with lemony notes. This Chasselas can be enjoyed immediately or after a relatively long ageing period (up to five years).
As an accompaniment to food and wine, it will be appreciated with local fish (fillets of perch or char), hard cheese, sushi or a soufflé with cheese and bacon. The nose of La Colombe is delicate and floral, revealing fragrances of white flowers. On the palate, it is light, sparkling, very fresh and has notes of sweet almonds. Ideal as an aperitif wine, accompanied by local salt flutes or as a starter with a hare or partridge terrine.

Le bouquet du Dézaley 2021 se révèle pas à pas. Il a besoin d'un peu d'air pour mettre en valeur ses différentes nuances olfactives au travers de nectarines et de fleur de muguet suivies de notes de pain frais. Er braucht ein wenig Luft, um seine verschiedenen Duftnuancen zur Geltung zu bringen, durch Nektarinen und Maiglöckchenblüten, gefolgt von Noten von frischem Brot. Frische Nase, leicht steinig, kühl anmutend, weisse Blüten, Zitrusfrucht, grüner Apfel. Im Gaumen straff, gradlinig, mit Nerv, Rückgrat und Säure, die Frucht ist knackig, die Struktur beindruckend. Im Abgang zeigt der Wein eine gute Länge und viel Würze, endet salzig, mineralisch. Bricht mit "Chasselas-Tradition", hat viel Charakter.

Im Gaumen frisch, trotz warmem Jahr vertikal, mit reifer aber nicht überschwänglicher Frucht, die knackige Säure puffert, wirkt lebendig, vibrierend, bei sich. 2018, Mont-sur-Rolle „Petit Clos“, Raymond Paccot, Waadt, Schweiz (100% Chasselas). Kräftiges Gelb. Reiffruchtige Nase, warm anmutend, Aromen von weisser Birne, Heu, Limette und etwas Lindenblüten. Der Gaumen ist gut strukturiert, kräftig und vollmundig, zeigt Opulenz und eine reife Frucht, wird am mittleren Gaumen frischer, saftiger, die milde Säure ist gut integriert und trägt die Aromatik in einen mitellangen Abgang, endet wie er in der Nase begonnen hat auf zarte Birnenaromen. Ein cremiger Chasselas der idealerweise zu einem zarten Fisch an nicht zu intensiver Sauce genossen wird. Jetzt bis 2025+, 17.5 vvPunkte (88/100). CHF 17.– inkl. MwSt.Rating - Review by Marco

Gradliniger Auftakt, auch hier mit frischer, saftiger Frucht, mittlere Komplexität, sehr lebhaft trinkanimierend. Contrairement à certains de mes amis, j'aime retrouver les caracteristiques de certains vins. La Colombe en fait partie. C'est un "La Côte" qui a du caractère et qui plaît. Contrairement à certains "La Côte" que je trouve franchement plats.Rating
