The Domain Le Burignon, whose vineyards in the Lavaux, date back to the time of the Cisterian monks in the 12th century. The parchments reputed to be visible in the vineyards of the Lavaux were built by the monastery of Haut-Crêt in Palézieux which owned these vines. The estate then passed into the hands of the Bernese during the Reformation and finally to the city of Lausanne in 1803. Chasselas represents 85% of the vineyards. For the remaining 15% of red wines, the majority is Pinot Noir.
