Nicolas Rossignol, born in 1974, represents the 5th generation of winegrowers on the terroirs of Volnay. He has been vinifying since 1994 within the Domaine ROSSIGNOL-JEANNIARD, then created his own estate, thus perpetuating the family tradition, while bringing a new approach to the terroirs of the estate.
After a complete technical training acquired at the Beaune Wine School, Nicolas puts his knowledge into practice during various internships at the Domaine Joseph Voillot in Volnay, the Domaine Louis Latour in Ardèche and the Domaine du vieux Télégraphe in Châteauneuf du Pape.
Domaine Nicolas Rossignol" wines are the result of a rigorous selection of grapes from vines cultivated according to traditional viticulture techniques inspired by biodynamics. The vineyard is managed using sustainable viticulture and also takes into account the lunar influence both in the work of the vine and in the elaboration and maturing of the wine. No chemical weed killers are used: only ploughing is used to maintain the soil.

Das Bouquet von Les Santenots, der aus einem an Eisenoxiden reichen Terroir stammt, offenbart Nuancen von Graphit, Waldbeeren und Gewürzen. Am Gaumen ist er charmant und dicht, versehen mit straffen, seidigen Tanninen, die dem gesamten Gaumen ein schönes Fundament verleihen. Ein temperamentvoller Wein. Die Nase ist super sauber, klar und rein wie ein Bergbach, das ist ein delikater Pinot-Duft, der einem hier in die Nase springt, rotfruchtig, mit feiner Würze, etwas Rauch und Lakritze. Im Gaumen schlank, sehr präzis, auch hier mit einer umwerfend delikaten Frucht, die von einer soliden Struktur getragen ist, jedes Element ist an seinem Platz, die straffen Tannine sind reif und fein verwoben, der Wein hat eine ausgezeichnete Balance und verfügt über viel Burgund-Typizität. Im Abgang von erstaunlicher Länge und mit Rückaromen die an Sauerkirschen erinnern. Eine wahre Pinot-Beauty, die jeden Gaumen verzücken dürfte und dabei kein Portemonnaie sprengt.
