Cleared and planted with vines in the 12th century by the Cistercian monks, the Dézaley Clos des Moines, owned by the convent of Hautcrêt until 1536, was then exploited by the bailiff of Oron and finally bought by the City of Lausanne.
With a surface area of 4.04 hectares, the vineyard, with its steep terraces, extends over a soil of fluvio-glacial origin, with an average slope of 35%.
Mythical wine, the wine of Dézaley is the most beautiful expression of the Chasselas in Switzerland. Ample on the nose, it reveals aromas of honey and toasted bread when ripe and seduces by its unctuousness to the palace. The Dézaley comes from south-facing sandstone marls that benefit fully from the three suns of Lavaux. It blooms generously only after 12 months in the bottle and its ageing potential is calculated in lustres by the connoisseurs.
